Stable knits such as interlock, double knit, sweatshirting and ponte knit are the easiest knit fabrics to sew with. They are usually a bit heavier in weight and less stretchy than other types of knit fabrics and are often used for tops and casual wear - pyjamas, jogging bottoms etc.
